Every year my husband and I host a big St. Patrick's Day party which involves the usual corned beef and cabbage, bangers and LOTS and LOTS of alcohol.
I'm coming up blank on dessert this year. I usually do 2 desserts - chocolate and something else. I can't remember what year it was (again, alcohol) but I made Irish Car Bomb cupcakes that were delicious. Maybe this year I'll do some kind of deep dark chocolate cake studded with Andes mints? The other dessert should be kinda fun and kitschy, but still yummy. The desserts need to be made in advance and enough for a crowd of about 20.
Any thoughts to either are appreciated!
