Others have posted that while the food was good, the service was greatly lacking. Someone even suggested that "favored people" might get good service, while others wouldn't. Anyhow, my friend and I would qualify as "favored people", so despite our delight at how beautifully appointed the new Fuji is; and that the fish is as luscious as ever, we couldn't help but be disappointed in the lackluster service that we received, which was close to being ignored.
Our view is that Matt is struggling with learning how to manage an operation which is more than double the size of his old place. All new staff. I assume that these are the growing pains of a totally new operation, and that Matt will soon learn to hire a manager to do that for him, so he can return to being the master kitchen chef producing wonders for all, in a more timely manner.
We were pleased at the crowds--place was close to being full by the time we left, at 1:30pm. Haddonfield seems like the perfect location for a truly upscale Japanese restaurant, and the locals have caught on to Fuji quickly. I'm delighted for Matt.
Two of our dishes were outstanding: fiddlehead ferns, mushrooms and shad roe as only Matt can make it. The other was the most unusual soft shelled crab dish--all crab, unusual sauce, plate-scraping good; sad when it was all gone. EVery piece of sushi consisted of pristine fish--the quality is there; all that is lacking is the service piece.
When Matt gets that under control, watch out Morimoto. A funny aside: the discoordination between the kitchen and the billing was such that we did not get charged for two of our dishes! Naturally we brought this to the waitressess' attention, but it took quite a while for them to re-construct the bill accurately.
