This may not be news to anyone but me, but I found a mix for the white gelatin dessert that's served for dim sum. You'll see it on the carts, often with fruit cocktail in it, or lychee. The mix is called Do Fu Delight. It's easy to put together, just milk and water, plus the mix. The thickening agent is agar and gelatin. The less water you use, the stiffer the gelatin will be.
I've made the coconut and it's very nice. It comes in almond flavor too. I bought it in a shop in Chinatown.
