Welcome to August’s Dish of the Month!

Fruit sorbets have something for almost everyone! They can be eaten by people who are vegetarian or vegan, dairy-free, gluten-free, and even sugar-free. They can be made with or without an ice cream maker. There are thousands of recipes out there, and you can make up your own using whatever fruit comes your way. They can be served between courses as a palate cleanser, for a dessert, or just for a treat on a hot afternoon.

On Serious Eats, Max Falkowitz states the golden rule of great sorbet: “start with good fruit and don't screw it up.”
