Happy New Year!
I have 3lbs of beautiful U-10 dry pack scallops to enjoy tonight. My husband and I are planning to do a few different small plate bites with them - bacon wrapped, seared with brown butter, and ceviche. Now, my husband tells me he wants a few fried as well. I've never fried scallops, so I'm looking for methods/recipes. Just flour? Battered? Tempura? Cornmeal? Should I cut them in half for quicker cooking?
Any suggestions would be appreciated!
