Fried chicken preparation tips

i plan on frying up some chicken this weekend. any tips re: suggested methodology would be appreciated. these might include:

1. to soak or not to soak chicken; if so, in what?? -- milk, buttermilk...

2. coating suggestions (flour seasoned w/just s&p, paprika, cayenne...)

3. probably most important -- cooking medium and temperature...i bet lard is best, but how about vegetable oil, peanut oil, etc...
