I went to Whole Foods today (Nov 11). They have fresh whole turkeys. But they are dated "Sell of Freeze by Nov 30". This is almost 19 days. How can this be? When I googled this, many sites say not to keep it in the frig for more than a few days at most. And if you buy any other poultry from a supermarket, you will never be able to find anything with a date 19 days out. Anybody with any thoughts on this?
Also, I have to limit my sodium intake. Assuming I don't brine it and simply decide to season the inside and outside ... does anyone have any thoughts on what proportion of salt/seasoning will "roast off" vs. stay on and become absorbed into the bird?
