I'm contemplating ordering a fresh turkey (HoKa Farms) but cannot get good answers on (1) is it actually stored at 25 degrees therefore somewhat frozen and (2) when I should pick it up/does it actually need some defrosting per #1?
has anyone bought one of these (I was going to get it from Gene's Deli in Chicago). How long are they good? Does it need some defrost time? Is it ok to pickup Monday and dry brine until Thanksgiving? Even the deli seemed clueless on answers.
