fresh, soft seitan in SF Bay area? / my veggie gyros recipe

recently relocated from the East Coast where I used to purchase great seitan from a small company. All the seitan I have tried here (Whole Foods, Berkeley Bowl,etc...) are very chewy and not fresh. Anyone know where I can get the good stuff? Not preserved and not gummy. It's integral to one of my favorite dishes - vegetarian gyros:

drain seitan and marinate in small amount of olive oil with 2-3 splashes of white wine vinegar (or juice from half a squeezed lemon) add thyme and oregano (I usually do dried), 1 small chopped garlic, salt and pepper.

voila!

serve on pita with sour cream containing dill and scallions, tomato, lettuce
