Fresh Ricotta

sallust | Dec 11, 201107:41 PM

Hey guys –

Christmas is coming up, and my family usually does a full out Italian three day fest, with homemade lasagna and raviolis for two of those nights. A key ingredient – fresh ricotta, nothing out of a tub.

This is our first Christmas back in Chicago in a couple decades, and I’m having a terrible time trying to find someone that makes fresh or on-site ricotta. I’ve checked Bari on Grand, Conte on Taylor, Panozzo’s on Michigan, and even rented a car to go out to Harlem Ave. While there were a couple guys making it out there, I don’t really want to rent a car every time I need fresh ricotta.

Do you guys have any ideas? I haven’t tried anything besides Italian delis, mainly because I wouldn’t know where to start.
