My husband is baking his way through "Baking Illlustrated" and is making all the recipes - in order. Now that he's in the chapter about fruit pies, this is somewhat of an issue, as a lot of fruits are now out of season. We were able to use frozen rhubarb and frozen berries for some pies, but the next one call for FRESH peaches (and personally, I hate canned peaches, so that suits me just fine). Is there any way that we could find those in Montreal next week (imported from God knows where)? Or should we just forget it and make the pie next summer?
