How "fresh" is "local" when buying from supermarket?

Last week, I picked up a dozen eggs at the Grapevine Wal-Mart. While looking for the use-by date, I noticed they were from a farm in Ponder - that's less than an hour's drive. Do I dare believe that these eggs were gathered "yesterday"? The whites had a a little run-factor when frying, so I know the answer is "no".

Does anyone have input to the path that locally produced foods travel in making their way to our local grocery stores?

(I hope this topic isn't reassigned to the General board, as I'm asking for the specific D/FW locale)
