I never considered this combination before.
I had a wonderful salad today with baby arugula tossed with pancetta and honey vinaigrette topped with fresh goat cheese and mango. The pancetta didn't do anything for the salad. The fresh goat cheese and mango were doing a tasty tango together.
I had not seen this combo in a restaurant and the combo didn't show up in any of my cheese books (the Cheese Lover's Cookbook & Guide, The New American Cheese, or the Cheese Course)
It was sooooo good. Just thought I would pass the idea along.
