Fresh Egg question

I'm making a mousse recipe that calls for eggs separated. The yolks are to be cooked to 175 degrees, and the whites call to be just whipped. Can I use eggs that are fresh? Meaning just laid yesterday? I've never purchased eggs from a farm before - most of my eggs are from the supermarket. Will the eggs I purchased this weekend be safe to eat - both the whites and the yolks? Or should I just be safe and use supermarket eggs? What about using the eggs in an ice cream recipe?
