Fresh corn polenta

A local program had a cooking show where a chef made fresh corn polenta with chanterelles

He said sometimes he tops it with lobster or fois gras.

It just amonts to grating the kernals off the freshest corn possible and cooking a few minutes with butter until thinkened.

It sounds good to me. I took a look to see if this was an original idea, but there are lots of hits for this on the web.

Back in 2007, a popular Chowhound CBOTM dish was Grilled Shrimp in Harissa/Fresh Corn Polenta with Sauteed Cherry. However, that involved mixing grits and corn kernels

Most recipes on the web use some sort of dried corn product with fresh corn as in this recipe for fresh corn polenta with garlic greens that uses cornmeal

This sounds more like a corn bread to me since it is baked, but it sounds good with three types of cheese, chiles and sour cream
