Help with fresh clams from Costco: ALWAYS SALTY

Agordo | Jan 8, 201506:27 PM

Hi I love the fresh seafood from Costco. Im a huge fan and consistent buyer of the PEI mussels, the fresh clams, shrimp, scallops, and the wild salmon. Ive had great reviews of all the dishes I make except my clam preparations. They are ALWAYS salty.

I bring the clams home and soak them in cold water for a minimum of three hours. I change the water at least once. When Im ready to cook, I scrub each clam vigorously under running water.

My usual prep is to sweat onion and garlic in EVOO, add a bit of white wine and herbs, and then the clams. I steam just until they are open (usually i open the pot and take out the clams as they open since i like them very tender.) I add ZERO salt. The clams excrete quite a lot of liquid and i count on this to serve over the pasta (and/or drink with a spoon).

I serve it over spaghetti and i never salt the pasta (since my clams are always salty).

Tonight, my latest attempt at making clams over pasta was inedible. Terribly salty. We could eat the clams but the liquid and pasta (that had soaked up the liquid) was inedibly salty. It was a shame as the clams were incredibly fresh.

What am I doing wrong here?
