Have people had luck, or is it a waste of fresh ricotta?
I ask because a local shop was selling fresh ricotta for $18 for FOUR pounds. More than I could use in a long time, but pretty cheap for the fresh stuff.
Maybe I'll hold off on buying it until I have a reason to throw an Italian feast (or maybe I'll make the ricotta the reason). Lasagna, Judy Rogers's ricotta gnocchi, and some stuffed shells should make short work of four pounds. And a ricotta cheesecake for dessert.
