I've been baking since I was a kid, I'm fairly good at it. I can make a decent layer cake, Genoise, Angel Food Cake, Coffee Cake that people adore.
I've tried so many different recipes but can't get a good result with Pineapple Upsidedown Cake. I want to use fresh pineapple and make the yellow cake part from scratch.
I keep ending up with dry edges and underdone middles on my cake, and overcooked caramel in the topping.
I've got two oven thermometers in my oven, I know my oven is baking right at 350 and other things turn out well.
Any tried and true foolproof recipes for Pineapple Upsidedown cake? It's just one of my absolute favourites.
