Food in the far north of Pennsylvania

Somebody help me. Northeast Pennsylvania is one of the most ethnically diverse places in the country but other than Italian and a few oriental eateries there don't seems to be any ethnic restaurants? With all the Poles, Welsh, Croatians, Lebanese, Ukrainians, Germans, etc., etc. here must be a decent ethnic restaurant or two hidden away somewhere thereabouts.

A related question: is there any thing north of Scranton worth exploring?
