In case anybody is interested: I had a party last weekend where I tried to make sure that everybody had enough to eat. So, word to the wise: you don't need to make ALL recipes for 40! I had SO much food left over! I had about 15 lbs of top round roast and about 7 lbs pulled pork for sliders, 6 lbs shrimp, and I made potato salad, pasta salad, black bean and rice salad, and mixed green salad. Oh, and 10 dozen slider buns. Lotta food! Two thirds of the meat went, all of the shrimp, and less than half of the salads! It was all delicious, but I simply didn't need to make so much. I could have easily made half of the salads and could have made 1/5 of the mixed greens! Needless to say, by the end of the week we will be tired of roast beef sliders and salad!
