went to soigne and had the app. special. it was called foie gras de mer. wow. never had anything like it in balt. just heard about it in restaurant publications, nyc and san fran.it's monkfish liver paired w/ seared toro. the server told me the chef was moving the menu toward more sophisticated palettes and cutting edge flavors. any comments from other foodies out there???
