Florence itinerary and Sunday dinner questions

I will be visiting Florence in October for a first-time visit. We will be arriving Friday night and dropping off our rental car and flying out Monday afternoon. I am having trouble finding a recommended spot for Sunday night dining.

So far, we have:

Friday dinner: Sostanza (perhaps second seating), chosen for its proximity to our hotel
Sat lunch: Mercato Centrale, sandwiches at Nerbone after Accademia
Sat dinner: Mario or Buca dell’Orafo - any thoughts on how to pick one over the other? By this point in our trip, we would be coming from a few days in Montepulciano and Emilia Romagna, if that makes a difference.
Sun lunch: 'Ino after Uffizi
Sun dinner: ???
