floating cream

I've been trying different mixed drinks and sometimes the directions call for floating a layer of cream on the top by pouring it over the back of a spoon. Somehow my tries always end up with a rather unpleasant looking curdled mess. Any tips on how to get this to "look like the picture" ? I am using half and half because that's what we have in the fridge. Does that make a difference?
