i cannot seem to produce a flavorlful boneless, skinless chicken breast. They always come out tender and juicy, and the outside of the chicken is good, just not the inside. I almost always marinate my chicken breasts with a homemade brine/marinade. I use water, salt, herbs and spices and allow it to sit for at least an hour to several hours. Then, I rinse and dry the meat and sear it before baking, seasoning the meat with salt, pepper, and other seasonings. What am I doing wrong. I have almost given up on buying chicken breasts because I can usually infuse more flavor in beef and pork. But my hsband loves chicken. It's very frustrating because I pride myself on being a good cook. Thanks for your help!
