I found these delightful flavored caramels in flavors that I'd never seen before (apricot, passion fruit, apple, strawberry) and would love to be able to duplicate them at home. They're very smooth (no chunks of fruit) and chewy. I'm just not sure how to go about modifying a caramel candy recipe. Should I use nectars or strained pureed fruits? How much nectar/fruit should I add and when?
Any help would be MUCH appreciated!
