How can I fix my blah chicken chili?

I made this last night expecting a good out come, but there was very little flavor and I have a big pot left! I would love some ideas before I start messing with it and totally ruin it

What I did: Cooked two pounds of chicken breasts cut in 5/8 inch dice in three batches. Wesson oil, salt. Did not brown; was afraid it would get tough. I tasted after cooking. It was tender and ok.

In a pot I then sauteed about two cups of onion, two or three garlic cloves and and about a cup of green pepper (all I had). Then added the chicken to the pot, 1 teaspoon of chili powder, about one and a half teaspoons cumin, one quart of low sodium chicken stock, two drained cans of northern beans, and two teaspoons of chicken Better Than Bouillon. I cooked that for a bit and then added four ounces of drained green chiles and about two cups of frozen corn kernels, salt and pepper. Cooked that a bit. It seemed to need some "body," so I served it over a half of cup of leftover brown rice with parsley for some color.

I did not have sour cream or cilantro or avocado, all of which would have helped but I am doing "making do" cooking while Covid is so prevalent.

I thought I could pour off the broth and re-season it. Any ideas?
