Fish Sauce as Substitute for Anchovies?

For years I have used fish sauce instead of anchovies in those many preparations where people use a few anchovies to add subtle depth, "umami," etc., to braises, stews, soups, red sauces, and more. My own switch came about simply because it's easy never to be out of fish sauce.

But I wonder if chowhound members think that there are applications where not using actual anchovies matters? (As a sideline query, I wonder about anchovy paste, which I've never used.)
