Where To Find Molecular Gastronomy Ingredients

jgoodfriend1 | Feb 14, 201610:14 AM

I need to do some spheriphication using ingredients such as sodium alginate and calcium lactate gluconate and I was not able to find a source online that told me where I could find them in NYC. Sure I could have ordered them from the internet but surely there was a store here in the city that had them in stock. No one on the internet seems to know though. There are a few sites directing you to a place called Ready4Dessert which sold these ingredients in a retail section of the restaurant but it does not appear to be open anymore and the person who owned this restaurant has a website where these things are sold in larger quantities. I went to whisk on Broadway and 23rd st in Manhattan to find a couple of tools and they actually do have a molecular gastronomy kit with a few little pouches of the ingredients and some tools but they sell it for $50! The sales people are super nice and they were very interested in what I was doing and one girl mentioned that a store called Kalustyan's may have it. EUREKA!!! They had what I needed and so much more and at a reasonable price. The store is on Lexington between 28th and 29th streets. Go there for all your molecular gastronomy ingredient needs if you do not want or have time to order from the internet.

Kalustyan's A Landmark for Specialty Foods since 1944
