I finally tried nettles, and I'm amazed.

After years of looking curiously at the bunches of nettles at the Greenmarket, I finally bought a bunch yesterday.
The sting of the leaves wasn't really remarkable after the poor greens had to stay four hours in a plastic bag without refrigeration...
But the taste!
I meant to make only a nettle tea: I boiled half the bunch, stems and all, and then tried the liquid. It's really like a vegetable stock, very rich and complex. Probably with a few additions it will make a great broth for soup.
Excellent complex, deep flavor.
Now I'm a fanatic nettle convert. Anyone who has recipes, please post! Anyone who's curious, look at this link, from the San Francisco Chronicle.
