Fillet-ing whole fish: Rib Bones...

Hi, I was wondering what professionals do about the rib bones when they fillet a fish. Do they cut around the rib bones (seems like a waste)? Do they go in with tweezers and pluck them out? I'm talking about your standard fish, like a stripped bass. When I buy a fillet of bass at the grocery store or a restaurant, how do they get those rib bones out of there? Or are they not selling me the half of the fillet containing the rib bones...
