Thanks to all for your suggestions as to which feta to use. I ended up using the french feta made by Valbreso. It was great, complimented the flavors really well and stood up to crackers and baguette. Next time I think I'll sprinkle a little Fleur De Sel salt on top. As for embellishments, as suggested, I toasted some pine nuts, they gave it a crunch factor which was very pleasing. I added some fresh rosemary and topped with a little cracked pepper. I received a lot of compliments. Even DH, who is not a honey fan, loved the app.
The person who gave me the honey was unable to attend the party so I will definitely make the app again but with bulgarian feta.
