I have two enormous bunches of fennel from my CSA. Since I've been getting fennel all summer, I've had my fill of braised fennel, and fennel in salads and so on. I was thinking I might like to do some canning this weekend, and thought maybe I could pickle fennel either alone or with some other vegetable or use it in some sort of relish. I can't find any recipes on-line - anyone have any idea how to do this sort of thing?
