Favourite places and dishes in southern Tuscany and Umbria, esp in/near Montepulciano, Chiusi, San Casciano dei Bagni, Assisi, Orvieto and Perugia

This will be my first visit to southern Tuscany and to Umbria. I've looked at older posts, was hoping for some fresh recommendations. We will probably focus on trattorias and other inexpensive to moderate meals. We will keep most dinners to less than 40 euros/person. I expect we will keep lunches to less than 20 Euros /person.

Would love to hear about any can't miss dishes. I also love coffee and pastry shops. One person in our group is a pescatarian, so any places that have better than typical veg /fish /dairy options would be appreciated, too.

I also plan to visit some markets. If anyone has favourite vendors or items they seek out or recommend, I'm all ears.

Also, if there are particular vineyards you'd recommend visiting, I'll pass along the recs to my wineloving friends on the trip. I'm not well-educated re: wine, but I do enjoy the Montepulciano wines I've tried that are exported to Canada.
