What Rick Bayless recipes really stand out in your memory? Which ones make an appearance most often on your dinner table? Discovering the flavors of Mexican food was amazing for someone raised on dishes seasoned with salt or oregano, and tuna casserole or broiled chicken. Some of his recipes are time consuming, but spending time in the kitchen enhances the dining experience for me. I try to avoid too much butter, and excess cheese. I like it that I don't get tripped up every other page by beurre blanc, and four cheese macaroni.

The Quick Cowboy Beans from Mexican Everyday are fantastic. I make them most often.
