What are your favorite Rick Bayless recipes?

What Rick Bayless recipes really stand out in your memory? Which ones make an appearance most often on your dinner table? Discovering the flavors of Mexican food was amazing for someone raised on dishes seasoned with salt or oregano, and tuna casserole or broiled chicken. Some of his recipes are time consuming, but spending time in the kitchen enhances the dining experience for me. I try to avoid too much butter, and excess cheese. I like it that I don't get tripped up every other page by beurre blanc, and four cheese macaroni.

I made Chocolate Birthday Cake from the Rick & Lanie book for guests last weekend. More than one person asked for the recipe. That was unusual, but I don't make homemade desserts as often as savory stuff.

Some of my past favorites from RB Mexican Kitchen are Chipotle Shrimp, Mushroom Cactus Soup!, Sweet Roasted Garlic Soup, Classic Ceviche Tostadas, Seared Lamb in Swarthy Pasilla Honey Sauce, and making Achiote Seasoning Paste in my Thai mortar. The Quick Cowboy Beans from Mexican Everyday are fantastic. I make them most often.
