So I recently got a bag of pilloncilo sugar -- loose, pre-grated, not the kind in the cone -- as part of the Rancho Gordo Bean Club that we recently joined (highly recommended, btw).
I've never cooked with pilloncilo before and the Rancho Gordo info just recommended using it in place of regular sugar, in oatmeal, etc. But I would love to find some recipes that highlight its flavor. I was thinking flan might be a good use of it. Anyone else have any suggestions?
