You want to eat in 15 minutes and nothing's prepared. What's your favorite thing to whip up?
Black bean soup
finely chop five or six cloves of garlic
finely chop 2 scallions
cut up a slice of bacon into small pieces
Saute the bacon and garlic in a soup pot until just before the garlic begins to brown
Add a large can of black beans, stir until hot
Add a few cups of chicken broth
Blend with an immersion blender until fairly smooth, and add more broth until you get it to the consistency you want.
Season with salt and pepper
Serve topped with creme fraiche/sour cream and the scallions
