Favorite Marinades, Please!

Working full-time with a toddler at home, I just don't have the time to cook some of the wonderful recipes I used to. A while back I tried the pulled pork recipe posted on this board, which was wonderful. I can throw the spice mixture together the night before and then chase my daughter around the house while it cooks in the oven.

It got me thinking-- are there other meat recipes in which you marinate the meat the night before and then bake the next day? This needs to be a dish that requires minimal attention, and preferably bakes in around an hour. (The pulled pork requires longer; I save it for weekends.)

Surely you chowhounds must have some favorites. Any type of meat or fish is welcome! I'd like to have several of these in my repertoire, and if I try your recipe, I'll post a review.
