My favorite is something I call "cold nights"
1 lb ground meat/beef browned, drained
1 lb elbow macaroni, cooked according to package and drained of water
1 - 2 (29 oz cans) of tomato sauce, depending on how wet you like your noodles
2 T butter
1/2 small onion diced
1 stalk celery diced
1 clove garlic diced
salt and pepper to taste
2 C *cheese for use on top of noodles
Brown meat in heavy skillet and drain off excess fat. Place meat in another container and reserve. Cook macaroni until done, approx 9 min in boiled salted water, drain and reserve noodles.
In same skillet as you cooked meat in, put butter, heat till hotish, add onions, celery, garlic, salt and pepper and cook until translucent, on medium about 4 minutes. Mix in beef and stir. Mix in canned tomato sauce and stir. Place cooked noodles in a 9x13 pyrex baking dish that has been rubbed in butter to coat. Place tomato/meat sauce, over all, spread even over pan. Now, put *cheese on top of the casserole and bake in preheated 350 oven for 35-40 minutes until cheese melts and is lightly browned.
Let cool when you take out of oven for 5 minutes and scoop onto a plate, serve with green salad and garlic bread.
*Cheese, I like a mixture of mild cheddar and jack cheese or colby mixed with mozzarella.
