"Faux " Food Spray

This may belong on "Not About Food", but as it's the cooking application of these in which I'm interested, not everyone chiming in with their thoughts on restaurants in general, etc., I'm posting it here.

This was an article in the London Times on artificial bottled flavors used in French restaurants -- truffle, wild mushroom, caviar, etc. I was just wondering if anyone had ever used any of these or had any encounters with them and might provide some feedback. While I might be ticked if I was charged for expensive ingredients in dishes where these were used, I'd use them in my home cooking if they were good (all of my friends know I'm broke, anyway, so it's not as if I could fool anyone).
