Need help fast! Two pounds of lamb's tongue

Visiting family in Atlanta. We went to the International Farmer's Market and there I saw lamb's tongues. Figured I had to get them to contribute to tonight's dinner. Trouble is, I've never made them before and I'm not finding any recipes on line.

I just want to cook the lamb's tongues, slice them thin, and serve them on a bed of shaved fennel, maybe with some shaved parmegiano and perhaps a mild vinaigrette.

Do I boil the tongues? For how long? Should I braise them in flavored liquid instead? Again, for how long? I know that a calve's tongue has to boil for two or three hours, but these are a lot smaller, so the cooking time has to be less. Right?
