Farm Share Cold Soup

Just dropped in to pick up my half of our share and found my mom in full work mode with the blender. B/c she's going away on Friday, she wanted to use up as much veg as possible. She'd put in purple and green peppers, a zucchini, two cucumbers, some basil, a patty pan squash or two. She also put in a vidalia onion and went a little overboard on that. Icky, she said. But then tossed in another zucchini, some balsamic vinegar, salt, pepper, and, in a stroke of what i think was genius, some almonds! Man, this was good! Slightly nutty, almost creamy and yet dairy free. I guess it was just green gazpacho and I shouldn't have been surprised b/c her tomato gazpacho is awesome.

Got me thinking about ways I should be more creative with Farm Share. I tend to just make salad, grill the veggies... too hot to actually cook...
Anyway, just on the heels of seeing the cold soup below, I figured I'd toss this out there.
