Fantasy Question for Boston Old Timers

I apologize in advance if you hate this genre of CH question. Just chalk it up to a recent mood of nostalgia and a recent poster who mentioned that a Dairy Fresh owner they had run into- had mentioned how they'd like to resuscitate DF. Hence, this thread: If you could resuscitate any three or four pre c.2000* Boston area restaurants, solely for your own pleasure, what would they be?
I think ours would be :Armadillo (chef Danny Wisel); Rauxa (chef/owner Jim Becker); Salamander (chef/owner Stan Frankenthaler); and Providence(chef/owner Paul OConnell.) I'd be very interested to see if anyone picked Peasant Stock, Turtle Cafe; Voyager, Jasper's, Aujourdhui, Panache, Root One, Aigo, Moncef Maddeb's original l'Espalier, Another Season, The Blue Parrot, Hunan Palace, Michela's, La Groceria, Joyce Chen,St. Cloud, Mexican Cuisine,............

* this is intended to be a fun question, not one that makes you look up dates etc. If you're off by a few years, no worries; just chime right in.
