I returned from a London vacation about a week ago, and decided to celebrate and remember the trip by making steak and kidney pie, a British treat I did not get to try while I was there. However, beef kidneys don't seem to come in single packs, and I have three soaking overnight in my fridge while my recipe calls for only one.
I've never even had beef kidney before, and I can only find two recipes in my cookbook collection -- a Dijon saute and a kidney stew. Any suggestions for different recipes? Also, if I make the stew, how well might it freeze?
