Less Expensive LV Options for 1st time visitors?

We, (self, wife, and 17 year old son) will be in LV for the first time in late July; 3 nights, then driving up to Boise for my wife's family reunion. Not gamblers,but will visit Casinos I imagine, and we'll be staying off the strip at the Westgate Flamingo Bay Resort https://www.westgatedestinations.com/...

We've looked at a couple of places like Juan's Flaming Fajitas (http://www.yelp.com/biz/juans-flaming...) and a couple of Barbeque places (John Mull's Meats & Road Kill Grill of Las Vegas, Nevada, and Rollin' Smoke- http://rollinsmokebarbeque.com/).
\Also, since my son is an unabashed fan of the NYC Carnegie Deli (I prefer Katz's, but never mind), we may give that a try.

We might even splurge on LOS or steak (Carnevale?)on one night, but we're more interested in local, off-the-path, less expensive places (with good food). We'll have a car, so we don't need to worry about cab fares. If there are less high priced Viet or Thai or Steak places that are good, we would likely do that, instead of the more expensive places.

Any input, suggestions appreciated.
