Ethnic Festival Food

Here in Baltimore, 'tis the season for ethnic festivals. For example, this weekend I hit the St. Anthony festival at St. Leo's church in Little Italy (guys - what's with the festival closing up like a ghost town at 8 PM on a Saturday night? Somebody have a curfew????) followed by a run down Eastern to the Greek Festival at St. Nicholas Church - those folks in Greektown are probably STILL going on from last night!

Anyway, I would imagine that for most festivals, the food ranges from "OK" to the sort of secret gems that have those in the know waiting all year for some special treat.

This request is for those who work at the festivals or go to them - what are the "worth waiting for" dishes that give Chowhounds a reason to go to a specific festival? Please mention the dish, the festival, and the date/location for that festival, if you happen to know it.
