Your essentials in a new range

We have to replace the busted 30' Kenmore Elite range that came with our house and are shooting for a refurbished or outlet range. In my dreams I'd love a double-door Miele or comparable wall oven with convection and a nice high (but not insanely high) BTU cooktop with 6 burners or varying sizes, stovetop knobs at stove level (not on the face), and something not white. But this is not going to happen right now... Because I am stubborn, I don't want to pay a whole lot more than it would cost me to have Sears "service" come out and toodle with the existing stove (no longer under warranty) before telling me I need a $300 part to fix it. So, $500-800 max.

So -- given those constraints, what would you decide is a must-have and what would you live without? Which brands are most reliable in this part of the market? And, yeah, :( I'm bearing in mind that low- to mid-end stoves simply won't offer all "dream" options...
