What kind of fish is "Escolar". I've never heard of it before, but had it this weekend at a local restaurant. It's a very mild white fish, a little firmer than cod, but not as firm as swordfish. Is this an example of a "marketing" name for a type of fish whose real name would turn diners off, like many restaurants that list "chilean sea bass" on their menu, rather than the fish's actual name,"patagonian toothfish"? Any information? Thanks.
