Am going to make this BlackBean-Corn Southwestern salad tomorrow, and I grilled enough corn today to make several times the recipe. It's an Epicurious recipe that was highly rated.
How well will this recipe freeze?
Is there any ingredients I should hold back from freezing and add fresh?
Black bean, jicama, and grilled corn salad (I'm going to delete the Jicama)
corn (I grilled a bunch of corn today w/ Taco Seasoning + butter mixture smeared on it. Yum!)
thinly sliced green onions
fresh lime juice
grated lime peel
I will also add:
- Orange bell pepper,
- cherry tomatoes halved
- gorgonzola cheese,
