empanadas...you think this will stay overnight?

My family is requesting empanadas for a party on Saturday. These are a quick and dirty version--Goya discs, ground beef seasoned with sazon, shredded cheese, and fried. I've made "fancier" versions but these are what they love, who am I to argue?

Anyway, my window of time is going to be very short on Saturday and I'm going to be busy getting the rest of the food together. Do you think they'll be ok if I put them together on Friday and leave them in the fridge overnight, then fry them on Saturday? Do you think I'd be able to fry them on Friday and heat them in the oven on Saturday, or would that be pushing it?
