I'm making eggs Benedict / Florentine this weekend for brunch for friends.
I was going to serve with potatoes, per previous discussion:
Now I'm getting excite/inspired, but wondering if my ideas will go together. Initially I was planning to do just spinach and toasted sourdough, but now I kind of want to do either grits pancakes or sauteed potato stack instead of bread (as described in discussion above). But not sure they go with spinach... I can't use ham (guests don't eat pork), but I could use salmon or some other veggie.
Ideas? Thoughts? Suggestions? TIA!
